2018 COS 'Zibibbo in Pithos' Zibibbo.
COS are based on the island of Sicily on the southern coast of Italy.
A variety rarely seen in New Zealand, also known as Muscat of Alexandria, Zibibbo is one of the oldest genetically unmodified vines still in existence. The grape originated in North Africa and the name is thought to have been derived from its association with Ancient Egyptians who used the grape for their own wines. Zibibbo is also a table grape used for raisins!
Fermented with wild yeast in amphorae before returning to the amphorae to age for a further six additional months. Partially aged on skins to give not just a richer colour but also a fantastical aromatic profile.
Don't worry there isn't tannin like in an orange wine - just a luscious, fuller body and much MUCH more flavour. This is one hell of a white wine!
