NV Pares Balta Cava Brut
Champagne is French, Prosecco, Italian and Cava Spanish, these European wine powerhouses all have their unique take on their ‘house’ styles of bubbly. Cava’s history is centred around the Penedes region just an hour's drive from Barcelona, on Spain's Mediterranean East coast. The first record of production dates to 1851, following a Spaniard’s trip to Champagne where he aimed to replicate the finesse and fame set by the king of fizz. In order to be classified as Cava, the wine must be made using the same process, methode champenoise and using the select varieties unique to the region, in this case Parellada, Macabeo and Xarel·lo. Pares Balta is owned by third generation brothers Joan and Josep Cusiné, but the operations (both viticulture and winemaking) lies in the hands of their wives Elena Jiménez and Marta Casas, who have made huge progress in quality over the years. This is dry, frothy, aperitif style Cava, crisp white fruits dominate, with a yeasty creamy palate. A very good example of Spanish fizz if you ask me!
